Taking back control of fire.
For over 30 years, I lived for barbecue. Chef, author, instructor, and fire fanatic — I explored BBQ traditions across America and Europe, always chasing that perfect flavor: smoky, caramelized, flame-kissed, or slow-cooked to melt-in-your-mouth tenderness.
And then one day, fire changed its face.
In early 2024, colorectal cancer came knocking. Suddenly. Like a rupture in my life’s trajectory. One surgery and twelve rounds of chemo later, I’m still here — but not quite the same.
What I thought I had mastered — fire — became ambiguous. Does it heal or does it harm? Does what I cook give life… or feed disease?
That question haunted me.
So I decided to search for the answer.
🧠 What I Discovered
I dove into studies, scientific papers, toxicological reports — nearly every day, for a full year.
I read everything I could on the links between fire cooking, red meat, smoke, and cancer-related compounds (PAHs, HCAs, nitrosamines)…
But I also studied the ways we can protect ourselves: antioxidants, marinades, meat selection, gentle cooking techniques, dietary balance…
And suddenly it hit me:
BBQ itself isn’t the problem. Ignorance is.
Grilling, smoking, slow cooking — these can all be healthy.
You just need to know how:
How to reduce risks.
How to balance your plate.
How to choose ingredients.
How to cook with joy — without sacrificing your health.
